Anchovy and Olive Pastry

Anchovies are a great way of getting those essential omega 3 fatty acids in to your diet. They are fantastic cupboard staples as they have a long shelf life and are a great source of protein which can be added to pastaโ€™s, salads and this delicious pastry recipe. Itโ€™s so quick and easy to make and super tasty, this will soon become a regular weekday meal!

Time: 40 minutes

Serves: 3

Ingredients:

1 x shop bought ready made puff pastry

1 tin anchovies

Half a jar of green or black olives

Feta Cheese (or any cheese of choice)

1 x yellow pepper

Oregano

Black pepper

Method:

  1. Preheat oven to 180 degrees

  2. Take out the pastry from the fridge and let it sit at room temperature for 15 minutes

  3. Add the pepper into a bowl of hot water for 15 minutes to loosen the skin

  4. Once loosened, take the pepper out of the water. Peel the skin from the pepper and discard

  5. Cut the pepper into whatever size you prefer

  6. Cut the olives into halves

  7. Roll out the ready made pastry onto a baking tray

  8. Add the chopped pepper, anchovies, feta and olives evenly onto the pastry.

  9. Sprinkle oregano and black pepper onto the pastry

  10. Place into the oven for 20-25minutes until cooked

  11. Serve with a rainbow salad
