5 Minute Mackerel Pate

If you’re fed up of the standard ham and cheese sandwich and are looking for a quick, easy and nutritious lunch, then look no further than my 5-minute pate. It’s so easy to make and it’ll last up to 3 days in the fridge so you have a ready to go lunch!

Time: 5 Minutes

Serves: 4

Ingredients:

1 pack of cooked Mackerel

1 generous tablespoon of creme fraiche or oat creme fraiche if dairy free

1 x handful of Parsley

1/2 juice of lemon

Drizzle of Olive oil

Salt, pepper

Method:

  1. Add all ingredients to a blender and blitz until smooth. If it’s not smooth enough, add more creme fraiche or olive oil.

  2. Serve with oat cakes or your favourite sourdough toast. Makes a great pairing with my Sweet Potato and Pepper soup
